How to make a pizza in the Pizzeria Pronto Pizza Oven.

Of all the grilling gizmos out there, a pizza grill is the most curious and some would think the most frivolous. Basically the Pizzeria Pronto is a gas kettle grill with stacked pizza stones inside it. If you’re thinking you could use this to cook burgers, it doesn’t work that way. You’re pretty much limited to thin pizza and flatbread, but it excels at these with its 700°-900º heat. If you’ve priced a wood-fired pizza oven, looked into building one from stone or even looked at adding pizza-making capability to your grill, you know the costs can be astronomical. The Pronto sells for $350 with legs. Get the cover and you can leave it on the deck year round.
Hummus is simple to make and is best to keep very basic and exceptionally smooth. More recently the trend has been to blend in chunky things, like garlic hunks, pine nuts, roasted red peppers, chopped olives, etc. But these things are better to top your hummus with and then drizzle on a little olive oil and perhaps sprinkle on some Zatar. The presentation looks much great.
This uses my pizza crust recipe, essentially the same dough as pita bread. It works well in the Pizzeria Pronto oven to make a tender pocketed pita for dipping or stuffing or a flatter pita for wraps. This uses the sponge dough method which creates very robust yeast and refrigerates and freezes well.
High temperatures and butter? Well, the combination usually leads to fire. If you’ve tried making pastry in your pizza oven, you know what I mean. This recipe uses cream instead of butter and avoids the flammability problems. I use this in my Pizzeria Pronto and it holds together nicely for turnovers.
